An exquisitely set table with fine china, dazzling stemware and beautiful flowers – we create perfect settings for the perfect meal. We cook the finest cuts of meat, and imaginatively prepare potatoes as a mouth-watering side dish. We labor for hours over the most delectable dessert and believe we have the perfect meal. That may be true – however, there is one thing missing – a great salad.

It is my belief that no meal is complete without a wonderful course of salad. How do you prepare a salad that will tempt the stubborn ‘I hate vegetables’ types? You start with the freshest ingredients – crisp leafy greens, plump tomatoes, cucumbers or zucchini, sliced red onions and colorful peppers. Then you add the dressing. What should the dressing be? It depends on your taste. Some people prefer to make their own – oil and vinegar with spices added for flavor. There are those who will choose a flavored vinegar – either balsamic or tarragon. Others will choose a bottled dressing. There are many of those to choose from, so
where do you start?
