Yom Tov season is here – the perfect time to focus on some fun, easy and inexpensive recipes. This summer, my husband and I took a quick trip to Miami. (A big shout-out to my parents for watching my son.)

In a restaurant in Aventura, I had the most delicious minty lemonana. It was so refreshing, I even considered ordering myself a refill, but not at the price of $8.99. When I got home, I recreated it in my amazing ninja blender (Thanks, DansDeals!) using ingredients I found in my fridge and freezer. It tasted the exact same, if not better.

I served it alongside some delicious shakshuka, a simple dish to make, yet so satisfying. Shakshuka is a Middle-Eastern, easy and fun dish to serve in or out of the sukkah for breakfast, lunch or dinner. It will satiate a hungry crowd in mere minutes. #Haveahappysweetnewyear

 

Iced Lemonana

Ingredients:

2 9 oz. cups of ice
8-9 fresh mint leaves
Juice of 2 lemons
Juice of 1 lime
½ c. sugar
1 ½ cups seltzer

 

Directions:

Blend all the ingredients together and serve immediately. Enjoy!

 

Shakshuka

Ingredients:

2 shallots
2 crushed garlic cloves
2 peppers (red, yellow or orange)
1 pint cherry tomatoes
1 bunch fresh parsley
1-2 torn basil leaves
1 jar of pizza or marinara sauce
4-5 eggs
Salt
Shredded cheddar or mozzarella cheese and sliced avocado for toppings

 

Directions:

Sauté the diced shallots and crushed garlic in olive oil.

Add the sliced peppers, cherry tomatoes, parsley, basil and salt to taste. Sauté until the tomatoes start to break down and it all becomes one unit.

Add in the marinara sauce, and simmer on low for 10 minutes.

Crack a few eggs directly into the pan, and cover with a lid.

Simmer on low for 5-6 minutes. Serve with shredded cheese, creamy avocado or crusty bread.
