For dressing

1 cup olive oil
½ cup white wine vinegar
2 tbsp Dijon mustard
1 tsp salt
pepper to taste
2-3 tbsp sweetener

 

Combine ingredients for dressing in a jar or cruet and shake until blended. Set aside. Place all salad ingredients in a large bowl, add dressing and mix. Let sit about ½ hour before serving.
